Guilt-free Cheesy Kale Chips

In the summer, I always find myself looking for healthy snacks to take to the park and healthy alternatives to chips to serve with sandwiches! These chips are packed with nutriton and are gluten-free and dairy-free!

This recipe is so incredibly easy and takes no time to prepare- all good things when we want to spend more time doing fun things outdoors instead of being chained to the kitchen!

Cheesy Kale Chips

1 head Locinato kale
1 cup raw cashews
1 cup tahini
1/2 red pepper
6-8 tablespoons Raw Parma (or nutritional yeast)
Juice of 1 lemon
Dash of sea salt
Optional: cayenne pepper if you like spicy (I didn’t use it in mine!)
Water

Combine all of the ingredients (aside from the kale, of course) into a food processor and run until smooth. Add water very slowly until mixture reaches desired consistency.

In a bowl, chopped the kale into 1/4 inch slices and put in a bowl with cheesy mixture. Flatten on a sheet and place in your dehydrator for approximately 12 hours (I did it overnight) until crispy. Depending on how goopy you make your chips, it may take a shorter or longer amount of time.

If you do not have a dehydrator do not despair…you can place the chips in your oven at 175 degrees with the door open for a hour or so (checking frequently of course.)

Strawberry Banana Coconut Yogurt Parfait

Summer is finally here and since I know we are all busy and perhaps traveling with our families, I am going to keep it simple with some go-to recipes that our family loves!

Breakfast is always tricky and I find that I get stuck in my cereal or toast ruts and I am always looking for more healthy breakfast ideas to spice things up.

One idea I have tried recently is doing a healthy, breakfast parfait. All you really need is fruit, some granola and a good creamy yogurt . Of course, I recommend a dairy-free yogurt such as So Delicious Coconut Yogurt, which even adds a richer taste but it is also easy to make your own Creamy Dairy-Free Coconut yogurt.

My kids, husband and I ALL loved this parfait and it felt decadent having “dessert for breakfast!” A nice change of pace…

Strawberry Banana Granola Parfait
4 strawberries (diced)
1/2 banana (cut into thin disks)
1 cup of yogurt (So delicious makes a delicious, creamy yogurt)
Granola (I used the gluten-free, raw Cherry Ginger Walnut from Laughing Giraffe)

Dice the strawberries and cut the bananas into very thin disks. Place a few heaping spoonfuls of yogurt in your cup, sprinkle granola on top covering area, then place a layer of sliced bananas on top then the strawberries. Continue until you have made the amount you desire. I did two layers and that was great for me.
