This must be the month that I am totally into sweets but, well, these cupcakes are healthy and sweetened with agave nectar! Come to my“Healthy Treats” Class on June 2nd and learn all about how to make these delicious cupcakes and other sugar-free vegan treats!
A few months ago, we served these to over 300 children (and adults) at the Green School Alliance Fair and at another private school in Manhattan and they were gobbled up! I promise you that treats do not have to be laden with sugar for kids to love them! These are so easy to make and absolutely delicious!

For the cupcake:
2/3 cups spelt flour
3/4 cup coconut ground in processor
3 cups coconut unground
4 tsps bak ing powder
2 tsps baking soda
1 ½ cups agave nectar
1/2 cup sesame oil
1/2 cup olive oil
1 3/4 cup water
3 tbsps vanilla
1 1/2 tsp sea salt
2 tbsps apple cider vinegar
Combine the dry ingredients in one bowl and the wet ingredients in another. Mix both together in a food processor until smooth. Grease the cupcake pans with olive oil cooking spray and pour mixture in. Bake for 30 minutes on 350 degrees.
For the delectable vanilla frosting:
¼ block of the firm Silken tofu (well drained!)
Hefty squirt of agave nectar
1 tbsp safflower oil
1 tbsp coconut oil
1 ½-2 cups Tofutti cream cheese (2 containers)
Mix in a food processor and place in the refrigerator to thicken. Top cupcakes with frosting and enjoy!






























Valentine’s Day is coming up, and on Feb. 14, many of us will
receive a box full of chocolates from a friend or family member.
Although this gift will be a token of their love, many of us will
have conflicted feelings about it, ranging from “Oh, yummy” to
“Oh no, how will I be able to resist eating every last piece and blowing my diet?” Many may feel guilty about eating chocolate because we have been told that it will make us gain weight or cause our face to break out. Well, feel guilty no more!
In September, I wrote an article on carb loading with sweet root vegetables. Since you can reference the information on how root vegetables can be added to your diet while training, today I will solely focus on one of my favorites… beets!
Contrary to what many of you might think or have been led to believe by well-meaning health professionals or manufacturers of low fat foods, I have an important secret to tell you- eating “fat” does not make you fat! Counting calories does not make you skinnier either but we will leave that for another article!!!
