This must be the month that I am totally into sweets but, well, these cupcakes are healthy and sweetened with agave nectar! Come to my“Healthy Treats” Class on June 2nd and learn all about how to make these delicious cupcakes and other sugar-free vegan treats!
A few months ago, we served these to over 300 children (and adults) at the Green School Alliance Fair and at another private school in Manhattan and they were gobbled up! I promise you that treats do not have to be laden with sugar for kids to love them! These are so easy to make and absolutely delicious!

For the cupcake:
2/3 cups spelt flour
3/4 cup coconut ground in processor
3 cups coconut unground
4 tsps bak ing powder
2 tsps baking soda
1 ½ cups agave nectar
1/2 cup sesame oil
1/2 cup olive oil
1 3/4 cup water
3 tbsps vanilla
1 1/2 tsp sea salt
2 tbsps apple cider vinegar
Combine the dry ingredients in one bowl and the wet ingredients in another. Mix both together in a food processor until smooth. Grease the cupcake pans with olive oil cooking spray and pour mixture in. Bake for 30 minutes on 350 degrees.
For the delectable vanilla frosting:
¼ block of the firm Silken tofu (well drained!)
Hefty squirt of agave nectar
1 tbsp safflower oil
1 tbsp coconut oil
1 ½-2 cups Tofutti cream cheese (2 containers)
Mix in a food processor and place in the refrigerator to thicken. Top cupcakes with frosting and enjoy!






























The state of your pantry is a metaphor for the state of your life.
If you have a pantry overstocked with food and are unable to
see what is there, perhaps you often feel overburdened with life
and need to simplify. If you have a pantry with nothing in it but white pasta, canned soup, and snacks high in sugar and salt, perhaps you are not taking care of yourself!
As a runner, I am always looking for ways to power up my runs and recover from strenuous workouts. But, with all of the bars, gels and other products and supplements out there touting this or that, I have to say I am always skeptical at best!
We’ve got to admit, we here at GirlieGirl Army eat more cooked foods than we’d like. Why? Because the one time we went raw, we’d never been thinner, felt better, or had more of a fabulous bounty of energy. And we can now thank Katharine Pennington for giving us a kick in the tuchus to get back on board with our sprouts;
