My favorite time in the summer to go to the fresh farm stands at the beach or the farmer’s market in Union Square is late July and early August when fresh farm-raised tomatoes make their appearance and there are delicious heirloom tomatos!
Not only are tomatoes high in antioxidants and Vitamin C but recent studies have shown that “eating tomatoes may decr ease your risk of colon cancer,” according to a Jan/Feb 2008 article in Men’s Health. In an Israeli study, 56 colon-cancer patients infused their diets with 30 mg of lycopene, an antioxidant found in tomatoes, every day for 10 days. Their levels of IGF, an insulin-like growth factor linked to cancer growth, decreased significantly.
